Berrylicious Mixed Berry Smoothie

This frozen mixed berry smoothie is smooth, healthy, and absolutely delicious. Weighing in at fewer than 400 calories, this smoothie will keep you going all day.
Did you know that frozen fruit is just as nutritious as fresh? This smoothie uses a frozen blend of berries: antioxidant-rich blueberries, blackberries, and sweet strawberries. The freezing also makes preparation easy, convenient, and thickens a smoothie into a frosty treat.
Both the vegan and vegetarian forms of this drink pack a daily wallop of nutrients: berries provide vitamin C, antioxidants, and fibre; soy milk is high soy protein; healthy fats are easily hidden inside. An excellent balance of protein, carbohydrate, and fat, this smoothie weighs in about 400 calories.
Smoothies are an easy breakfast (try one on the go!), convenient after-school snack, and provide protein and extra fluids after a workout.
For soy allergies, substitute almond or rice milk for the soy milk/tofu and add a tablespoon or two of protein powder instead.
Berrylicious Smoothie
Makes one generous (large) serving, but is perfect shared when some toast and peanut butter is included.
Ingredients:
- 1 cup soy milk or other non-dairy milk, or dairy milk
- 1 cup frozen mixed berries
- 1/2 medium banana (frozen or fresh)
- 1/3 cup plain yogurt, soy yogurt, or soft tofu
- 1 tbsp. flax oil or flax oil blend
- 1 tbsp. ground flaxseed, optional
Instructions:
- Combine all ingredients in a large glass (if using hand blender) or in a blender.
- Blend away until desired consistency is reached. Smoothie will be thick.
- Pour into glass and stir in ground flaxseed, if desired.
- Enjoy, but watch out for brain freeze!
