This tasty treat is very healthy, has absolutely no dairy and is very easy to make. You will never have to settle for greasy pizza again!
This delicious recipe will make a 12" by 17" oblong pizza. The pizza will be very hot when done and the crust will be a little on the the thick side so let it cool. Cut it with a kitchen scissors for best results. It will make six generous servings. Delish!
For The Pizza Dough:
You will need:
1 Package of active yeast
1 tablespoon of sugar or honey
2-3 cups of whole wheat flour, or 1 and a half cups of whole wheat flour and 1and a half cups of unbleached white flour, depending on how dense and chewy you like your dough.
1cup of warm water
For The "Cheese":
You will need:
1 block of extra firm tofu
Half a teaspoon oregano
Half a teaspoon basil
For The Sauce:
2 cups of any tomato sauce will be just fine
Prepare The "Cheese" First:
Crumble the block of tofu with your hands in a large strainer and set it over a bowl so the water drains out of the tofu.
Set aside so the excess water drains out of it.
Make The Dough
Put the water in a large bowl. Add the yeast and honey, stir till blended, then cover the bowl with a clean towel and let it rest for 10 minutes.
In another bowl sift your flour to make it lighter or to blend your mixed flours if you are using half whole wheat and half unbleached.
Add the flour gently to the yeast, it will now be puffy, and gently knead or stir everything together. Try to knead the dough as little as possible so it will not be tough.
Put the dough ball in a large lightly oiled bowl, cover with clean towel and let it rest for45 minutes.
After 45 mininutes, the dough will have expanded. Dust your hands lightly with flour, punch the dough ball down and knead about 10 times. Your dough is now ready for the pan.
This dough will cover a 17" by 12" oblong pan.
Pre-heat your oven to 350 degrees.
Lightly oil you pan. Flour your hands so manuevering the dough will be easier. Place the dough in the middle of the pan and press the dough out repeatedly, working it out to the pan's edges.
When your pan is covered, pre-bake the crust for about 7minutes. Do not let it overbake!
Remove the pre-baked dough and set aside.
Blend Your Tofu "Cheese"
Blend your drained tofu with the herbs in a bowl and set aside.
Preparing the Pizza
Scoop your sauce on your pre-baked pizza dough with a soup ladle and smooth it out with the ladle.
Sprinkle your "cheese" on top. You may drizzle a little salt, pepper and olive oil over the cheese.
Place in the oven and bake for 20- 25 minutes.
The pizza is done when the the tofu "cheese" is slightly browned.
Cut out a huge slice and enjoy! Don't burn your tongue!
