Rutabaga Rediscovered as an Easy Vegan Side

This turnip side dish recipe sheds light on the humble veg also known as rutabaga - an often overlooked fall root vegetable. Cooked just right - it's sweet and delicious.

This turnip recipe is a tried-and-true family favourite. After the peeling, turnip is simple to prepare, making it a great everyday side dish that still feels special enough for holidays and special dinners. Some may consider it comfort food.

For this recipe, choose a large waxed turnip, also called rutabaga or swede.

Cooking the Turnip

Turnip can smell a bit strong while it's cooking. If it becomes bothersome, consider cooking it outside on a barbeque burner.

Turnip Side Dish Recipe

Serves 4

Ingredients:

  • 1 large rutabaga (also called turnip or swede; the kind that comes waxed)
  • 1 tsp. salt
  • 1/4 cup butter or margarine
  • 1-2 tsp. brown sugar

Directions:

  1. Wash the turnip and peel it with a potato peeler.
  2. Cut it the rutabaga into rough cubes. Don't worry about keeping the size or shape consistent; it will be mashed up later.
  3. Bring a medium pot of water to the boil and add about one teaspoon of salt. Add the turnip.
  4. Boil for about 45 minutes; drain.
  5. Add about a quarter of a cup butter or margarine and the brown sugar.
  6. Mash all the ingredients together.
  7. Stir, then add salt and pepper to taste.

Rutabagas and turnips are NOT the same thing at all. Turnips are a little bitey like radishes, with a white flesh. Rutabagas are members of the cabbage family and are sweet. They are orange fleshed. They are very different from each other.

rutabegas with equal parts carrot boiled together and mashed with a pinch of brown sugar, dash salt, little milk or cream - OMG! one of my absolute favorites any time of year!!
