Meat Or Beans?

I like to eat meat, but I live with my mother who won't eat meat. Providing meals can be tricky because I don't want to cook two meals for lunch and two meals for dinner.

We both like baked beans, so we enjoy baked beans with cheese on toast.

We both like egg, so we also enjoy scrambled eggs with cheese on toast. I often add creamed corn, sometimes peas and potato.

Another simple meal that we both enjoy is creamed corn and tinned tomatoes with cheese on toast.

Cheese and toast goes with everything! lol

Hi There!

I laughed when I read your post because it reminds me of when I first made the transition. I lived with my parents - both omnivores - at the time. It was difficult at first, and I was lucky to have them come around to trying some veggie meals.

When eating with those who prefer meat, I have found creative ways to make it easier: we try to cook meals that can be a vegetarian or meat protein source. Chili is a great example.

We sauté onions and garlic in one large pan first, then add all the chili fixins (seasonings, beans, tomatoes, veggies). The ground beef gets browned in a separate pot, to which half the chili mixture is added after simmering for a bit.

The remainder of vegetarian chili in the first pan may be eaten as is, but sometimes I add some soy protein granules (found at Bulk Food Stores) for a meatier texture.

Just in case you get sick of toast! happy

Hi Jill, I've tried your suggestion of cooking a pasta or rice dish, then adding meat to mine. That does work well. I'm just a lazy cook. I don't like washing up and I want to eat as quickly as possible, so don't like waiting for things to cook, lol.

I'm getting bored with our meals and need to broaden my cooking skills and vary our diets. I need to lose weight and my mother needs to gain. When my mother and I dine out I often think of the rhyme, "Jack Spratt could eat no fat and his wife who could eat no lean", lol.

I first learned of the benefits of vegetarian cooking, many years, from my mother's bookshelf -- Diet For A Small Planet by Frances Moore Lappe. An excellent book.

And I'm rambling on :-)

Re-reading this post it occurred to me that meat AND beans together work well too - if you're not vegetarian.

Using beans together with ground beef can increase the fibre and decrease the fat and cost of some dishes - I've heard of people "cutting" their beef with beans in meatloaf, hamburgers, and casseroles. Mashed beans especially have a texture that fits in with ground beef.

Every little bit helps the animals, our environment, and our health. Small changes do count!
