Hi There!

I laughed when I read your post because it reminds me of when I first made the transition. I lived with my parents - both omnivores - at the time. It was difficult at first, and I was lucky to have them come around to trying some veggie meals.

When eating with those who prefer meat, I have found creative ways to make it easier: we try to cook meals that can be a vegetarian or meat protein source. Chili is a great example.

We sauté onions and garlic in one large pan first, then add all the chili fixins (seasonings, beans, tomatoes, veggies). The ground beef gets browned in a separate pot, to which half the chili mixture is added after simmering for a bit.

The remainder of vegetarian chili in the first pan may be eaten as is, but sometimes I add some soy protein granules (found at Bulk Food Stores) for a meatier texture.
