I just carved my first jack o'lantern in ages...I too love the seeds. I've never used oil though. I simply sprinkle with some spices chipotle pepper and kosher salt. Just browned is great. Yum. I almost want another pumpkin just for the seeds. Pepitas are yummy too and I often put them in the spiced nut mixes I make. Here's my smoked spiced nuts recipe.

Those almonds sound DELICIOUS! I've been on a chipotle kick lately but never considered that.

Do you cook your pumpkin seeds for less time when there's no oil?

couldn't guess how much time I toast them for, just until they brown...

my latest nuts were toasted with some special olive oil (see the post on Meyer Lemon Olive Oil) I used a touch of their tangerine olive oil, with za'atar spices. Two friends visiting helped me polish them off the other night and they loved the use of za'atar that way!
