I just carved my first jack o'lantern in ages...I too love the seeds. I've never used oil though. I simply sprinkle with some spices chipotle pepper and kosher salt. Just browned is great. Yum. I almost want another pumpkin just for the seeds. Pepitas are yummy too and I often put them in the spiced nut mixes I make. Here's my smoked spiced nuts recipe.
